Class-2 winter wheat: a complete field-to-elevator guide

How to harvest, dry and sell class-2 wheat without losing the price premium over class 3. We break down protein, gluten, test weight — and when to hold.

Class-2 wheat commands a 600–1100 UAH/t premium over class 3, but the quality bar is strict: protein ≥ 12.5%, gluten ≥ 23%, test weight ≥ 740 g/l.

Quality parameters The most common downgrade is moisture above 14% or foreign matter. Watch the dryer — over-dried wheat loses test weight.

When to sell Typical seasonal pattern: price peaks Feb–Mar, troughs Aug–Sep. If you have 3+ months of storage, holding makes sense.

Logistics Class-A elevators prefer lots of 1000+ tonnes. For smaller volumes use local hubs or co-ops.
